Whole Wheat Banana Nut Muffins

Have some over-ripe bananas sitting around? Here’s the perfect solution! This recipe is dairy-free and full of healthy flax! It will yield 12 standard-sized muffins. Let me know how it turns out for you!

Ingredients:

  • 1 cup whole wheat flour
  • 1/2 tablespoon flax seeds
  • 1 tablespoon ground flax seeds
  • 1/4 cup applesauce
  • 1/2 cup walnuts (chopped)
  • 1 teaspoon baking soda
  • 2 eggs
  • 1/4 cup extra virgin coconut oil (melted)
  • 2 over-ripe bananas
  • 1 teaspoon vanilla
  • 1/3 cup maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)

Directions:

  1. Preheat oven to 350 degrees F
  2. Chop walnuts (to your size preference) and place in medium mixing bowl
  3. Add all other dry ingredients to mixing bowl
  4. In a separate bowl, beat together two eggs
  5. Add vanilla, maple syrup, coconut oil to eggs
  6. In an additional bowl, mash bananas
  7. Combine all ingredients and mix well
  8. Line a muffin tin with muffin cups
  9. Evenly distribute batter across muffin liners
  10. Place on middle oven rack and bake on 350 degrees F for 15-16 minutes or until a toothpick can be inserted into the middle and cleanly removed
  11. Allow at least 10 minutes to cool
