Fruity Breakfast “Burrito”

We may have found a breakfast that Muffin Man loves more than muffins (gasp!) This breakfast “burrito” is as quick and easy as an omelet, with a sweeter twist! I hope you enjoy this as much as we do

Recipe

Prep Time: 5 minutes

Cook time: 5 minutes

Total time: 10 minutes

Ingredients:

  • 1 egg
  • 2 medium strawberries, diced
  • 1/4 medium banana, diced
  • 2 tablespoons cottage cheese
  • Non-stick spray (I use a coconut oil spray)

Directions:

  1. Place a small, sprayed, fry pan over medium-low heat
  2. Beat an egg, then add to fry pan
  3. Cook over medium-low heat for approximately 2 minutes, or until bottom of egg is cooked but not browned
  4. Flip egg onto a plate, then transfer back onto fry pan (with opposite side down)
  5. Cook over medium-low heat for approximately 2 minutes, or cooked without being browned
  6. Flip egg onto a plate
  7. Place cottage cheese, strawberry, and banana in a line across the center of the egg
  8. Roll into a “burrito” and serve
